It can only be a couple of things. First, it could be the head gasket and if it is blown you will get water in the oil. Also, another problem could be the head is cracked and you could be getting water in the oil from that. I take it the machine shop did magnnuflux the head before rebuilding it to check for cracks. The last thing I could think to be a problem is the valve seats. The reason I bring it up is that if you had the seats replaced or hardened seats put in, if the machine drills to far they will hit the water passgae underneath the seat. If they struck the water passage while machining your seats your head is now junk, because my machinist told me that if try to weld the hole it will harden the cast iron and and can't be machined again. If you didn't run the truck long enough to break everything in and make sure that all the gaskets are going to seal, it leads me to believe that the head gasket may not have sealed properly and may have started to leak. It is important to let everything run for twenty minutes to break everything in on intial start up. If not you run the risk of this happeining or the camshaft not breaking properly and flattening a lobe.
