225 Slant six rebuild?

Hi All,
Last fall I ended up getting my hands on a ’68 Dodge D100 with a 225 slant 6 and I’ve been browsing the threads for the last couple of months, so thanks for the technical info. I have a couple of questions though as I bring her back into full running service.
First, I’m looking at getting the engine rebuilt since the body has about 120,000 mile on it and the last time I know the engine had any serious work done it was back in 1984. The engine still runs so I’m debating on how good of a deal this would be. Any ideas/suggestions?
Second, I know that I have an issue with the Holley Carb currently installed. I’m thinking that it needs a complete rebuild, but I’m wondering if it might be better to install a new 2 barrel carb instead. Has anyone else tried this out? Any suggestions or recommendations on a good 2 barrel carb? Would I be looking at getting an adaptor plate for the intake manifold or can it bolt right on to the existing manifold?
