Those of you that have 500's and 600's and have went from duals to singles on the rear, what have you used for tires and rims and what is the offset

Why would you do that? In 15+ yrs on multiple forums, I haven't seen a single post where someone has done that.

I have never seen a single wheel for a 500 or 600. They would have to be made. And then they would stick way out of the front fender wells.

It has been done.
A W500 with custom super single wheels
A W500 with custom super single wheels
W500 w singles
W500 w singles

You can even buy them off of Ebay (steel ones, not the ones pictured), but the kicker is front wheels have to have a different offset than the rear to have any sort proper track.

Wheel width determines tires used, but the big Michelin military surplus seem to be the ticket.

The plan is to put an 8' bed on a D600 and I don't want the duals sticking out past the bed. I take it that the wheels need to be custom made

I am pretty sure these guys used to make them, or at least had some on their Ebay store. They do have the tires you'd need if you found the wheels.

Also they aren't too far from you. Maybe 50-60 miles

The orange truck is my photo. Guess I forgot about the singles. The point of the "why" question is that the load the 500/600 is rated for far exceeds the capability of any standard single tire.

Your white D600? :thinking That would look really cool with

I understand the weight issue, but I will only be pulling my trailer with it, not using it to haul heavy loads. John, that would be the same truck after I buy it back. I sold it several years ago and just made arrangements this past weekend to purchase it back.
