Depends on your compression, the rest of your valvetrain, your torque converter, gears, and what you need/think you want it to do.
Without some oiling mods, I would not spin a 360 past 5500, so that leaves your cam choice pretty mild, IMO.
J heads will handle 280@50, mech roller 600 lift, if that is what you want.

its a quick build up,my engine was junk in my truck 1972 la 318.the oil looked like milk the heads were built up with rust around rockers ,the truck had been sitting for 9 years,dont trust it when i can get a 360 out of a 1976 motorhome,the engine looks clean turnsover nice,but i am still going to change head,intake,exhaust gaskets,oil pan gasket to to check out bottom end,if i seen no problems,not gonna dissasemble,same with cylinders if they are clean and arent leaking when i take a commpression check with heads on before taking apart,gonna get j's cleaned up with appropriate springs from mopar,and the 508 cam or maybe even the 484 ,not tottally sure depends,not sure of the commpression with j's on this engine ,if the rings are leaking ill get some keith black 107's,with j heads told will be about 9.5.1.,also the gears are 3:91's.for now stock 4 barrel,orig 2 barrel engine,750 eddy,mopar electronic ignition.

Still, without putting a high stall TC in it, I don't think that cam is going to pull off the line likr you will want.
I would.................
(If you deck the block, run flat tops, and get it over 9.5to1)
Use a cam, 270-280 duration, 108/110 center....Edel 750, single plain manifold,, and 2000-2300 stall converter..............
(if you just leave it alone and keep the 8-1 it has)
Use a cam 260-270 duration, 110/112 center, your cast manifold, 600cfm edel.
A 750 edelbrock is going to need extensive tuning to run on a mildly built 360. (you could get 450HP out of a 600cfm)
If you cam it as big as you want to, and dont get the compression up, it will be a dog on the low end, and not make as much power on top as it would if you had a smaller cam.

Sooo you have a worn out 2 bbl 318 and a early 360 with small valve "J" heads.
You are in the middle of "...what's I would do". The 318 with standard 360 valves in the heads, a 4 bbl carb with a carb no larger than 600 cfm's and a RV/ Torque cam will move the truck as if you stole it. Aaand a 360 with the same cam and etc will run about the same with the 318 trying its best agaist an extra 42 cubes.
This is my 1970 W100 2 bbl 318 Story. I now have a E58 optioned 360 from the local Pick & Pull with 1992 Magnum exh manifolds. Since I have a Vintage RV trailer, my rpm range is 1,500 - 3,000 rpms.
