Mine weighs 4500 and I'm running 10" mustang rear discs. They seem more than adequate

I guess they might work then......
I was just going by 80's vintage Dodge D100-150 pickups have 11" front rotors and 11" rear drums, so............I don't know 9" just seems small to me :2cents

I believe that most of the hype around rotor size has to do with keeping things cooler and lighter without sacrificing strength. Honestly, I believe it will be adequate for a cruiser

front disc brake size is critical to have as large a rotor as possible. i'm using a diplomat/aspen rotor on my fronts and a mustang rear rotor. both ends use a GM style pin-type caliper. with the back brakes only providing 40% or less of the braking then they are not as critical however rear brakes control pedal feel more so than the fronts do.

i switched to disc since 11" rear drum parts are such a pain in the @#% for me to find easily. i have also found that fading brakes are practically and thing of the past since i switched (if i drive normally).

if i drive aggressively or with spirit that they can fade a little but recover pretty quickly compared to drums and cheap linings.

Will the 1961 stock steel rims 15' be the same bolt pattern on the GC axles?

the truck's use a 5 on 4.5 INCH bolt pattern. the jeep GC's use a metric bolt pattern but it is very close.

According to the Wrangler forum, 93-98 Grand Cherokees use the 5 on 4.5 inch bolt pattern. This is the same as a 61-71 D100. 99-04 GCs used a 5 on 5.5 bolt pattern. There are no metric patterns.

the GC uses a metric bolt pattern - it is technically a 5 on 4.5 but it is half a millimeter smaller or larger. if using jeep metric wheels on a 5 on 4.5" pattern the wheels will never fully tighten up.

What is your source? I cannot find any information that agrees with your statement. All sources I've looked at state exactly what I stated above.

I didn't know the GC's went to a 5" on the 99-up. I thought they were all 4.5".....like the Cherokee's, interesting.
