Any tips on removing a stubborn intake on a 360 motor?

Are you sure you have all the bolts out?

Usually you can pry on the front and back, gently, under the ends of the manifold. Most times there is enough space to get a smallish prybar in there.

I had a IH 345 that I had to really pry on to get the manifold off but it eventually came off.

BE VERY CAREFUL NOT to pry against the timing chain cover!!!
It is aluminum and very thin on the top and will break, dont ask how I know this!
I pry between the head and the intake right in the front after I triple check to make sure there are no bolts left.

good luck
